Introduction:
Hi, for any new readers to this blog, I am Valerie Mitchell and I'm about to be a senior at Longwood University. Throughout college I have learned that being healthy is basically a necessity, at least for me. My first and second semester of my freshman year at Longwood I wasn't very healthy. I would order Dominos all the time and I wasn't eating well for my body or my mind. Not only did this result in the freshman fifteen, but it also resulted in being a broke college student. I went through my entire refund check on mostly food, and almost all from dominos and other places. You may be thinking did you have a meal plan? Well, yes I had a meal plan but I just wanted to eat out, which meant I was eating expensive bad food. Ever since then I have learned that saving money is extremely important and eating healthy is just as important.
While I try and stay healthy, sometimes I just want dessert. And I have found one dessert that is two ingredients and one hundred and twenty calories. This is dessert is called the two ingredient fluff cake. I got this recipe from a website called Yummy Healthy Easy. The only two things you need is a sixteen ounce box of angel food cake mix and twenty ounce can of crushed pineapple not drained.
R E C I P E:
So let me explain how to make this fluff cake. You will need to get a large mixing bowl and a spatula. Put in sixteen ounces of angel food cake mix into the large bowl and then pour in the twenty ounces of crushed pineapple (not drained). Mix those two together until you get the consistency of cake batter. Grab a non stick cake pan and pour the mixture in. Make sure to use your spatula to flatten the top to keep the cake even and so the fluff cake cooks evenly. Then put the cake in the oven, the box should tell you what degrees to preheat the oven, but the cook time should be about thirty five minutes. When the cake is done check it with a toothpick and make sure no cake is on the tooth pick, that means it is finished. Then cut the cake into squares. I would say cut two lines horizontal and three lines vertical to get the right amount. Then if you wanna get fancy you can add some cool whip and berries to finish. This cake has only a five minute prep time, and cooks for about thirty five minutes. Which means you can get some homework done while the fluff cake is baking.
This recipe is so perfect for that college students on the go, because this recipe makes about 12 mini cakes. Once it's cooked these are so easy to take on the go or to eat at home. This recipe comes out to 0.29 cents per serving!!! That is crazy, I don't think I know of anywhere that sells an angel food cake with fruit on the inside for .29 cents. This cake is only one hundred and twenty calories and with out fruit on top has three grams of fiber, if you add the fruit the amount of fiber per serving will surely go up. To find all of the expenses of this and all other recipes, I use Walmart's website.
When I made this recipe I personally liked adding strawberries or blackberries. But my mom liked adding raspberries on top. If you have the cake by itself it is definitely good enough. I just love fruit, so anything I can add fruit to, I do. That is what made me love this recipe, because when trying to be healthy you should try and have fruits as your dessert instead of brownies, ice cream etc. But sometimes you want that more fatty dessert, sometimes you just want cake. So, this recipe is a great way to have cake but still be eating very healthy.
Above is a video demonstrating how to make the two ingredient fluff cake. This video is helpful because you can. see exactly what I was telling you above. At the end of the video she adds cool whip, strawberries and raspberries but feel free to add whatever you want to you fluff cake, or don't add anything at all.
These are some pictures of the fluff cake, in the. second one you can see how the cake is sandwiched together. I think that's how I would eat mine. If you have a little extra money and time on your hands I found a healthy angel food cake recipe from the website the vintage mixer.
