Delish Chicken Fajitas

Hey readers, my name Valerie Mitchell and I'm a senior at Longwood. I realized through out my past three years in college that it can be difficult to have the time or motivation to want to make a healthy dinner. Then I would end up finding myself in a line for a cheeseburger and fries or Panda Express. Eating healthy in college on a budget is so important. But since college students (myself included) don't always have the motivation to make dinner. I wanted to make/find a recipe that would be filing, healthy, and not annoying or stressful to make.


The recipe I am using for inspiration can be found here. But I am going to be tweaking it a little. For this recipe you will need about chicken breast or tenderloin, one red bell pepper, one green bell pepper, one onion, one lime, some chili powder and jasmine rice. When looking on the Walmart grocery website for prices I found that you can get two pounds of chicken for $3.00. Obviously prices will fluctuate because it is based on weight. So this meal all together comes to $6.38! That is crazy, considering you could easily have leftovers for a few days following. And if you only eat half of the dinner that means your dinner both nights is only $3.19! Let me know of another place where you can get chicken fajitas and jasmine rice for under 4 dollars.


You may be wondering why I have jasmine rice in the recipe and no tortilla shells. This is because tortilla shells are expensive and you always get way too many in a package. Unless you are going to eat a tortilla shell everyday, some will go bad and that just like throwing your money out the window. But jasmine rice is just as filing, better for you, and rice doesn't go bad as easily as tortilla shells do.


R E C I P E:


Once you have all your ingredients you going to want to cut the green and red bell pepper into slices, and also do the same with the onion, and put that off to the side. Then that you are going to want to cut the chicken into strips. After that take the chicken and marinate them in lime juice, and 1-2 tablespoons of chili powder depending on how hot you want it. Get the vegetables you put to the side and cook them in a non stick skillet, once they are done put them in a bowl to the side. Then take the chicken strips and put it into the same non stick skillet, and cook over medium heat until around 90% done and through the vegetables back in. Then you need to cook this until the chicken is cooked and your desired consistency with the vegetables. While this is cooking you should have your rice cooking. I would recommend getting the jasmine rice that you boil in a bag because it only takes ten minutes and all you do is leave it in boiling water, so that way you can focus more on the chicken a vegetables. Once it's done you can place the rice in a bowl and put the chicken fajitas on top. These fajitas come out to about 481 calories if you eat the entire portion. But if you only eat half then its only 240.5 calories.


Here is a video on another way to make chicken fajitas, this adds some more ingredients. But I think this video could be helpful to see someone making them in addition to reading how to do it. You will notice she doesn't add chili powder she adds fajita seasoning. I looked it up and it isn't any worse then chili powder so if you want to use that instead you will still be in the same calorie range.


These are the fajitas made, they turned out amazing!
